Sparkling Rose Lemonade

How is it February already!? This year is taking off quicker than ever and here we are finding ourselves standing at the doorway of spring - and maybe more importantly daylight savings  - hello extra sunshine! A wonderful time indeed. In fact, I think we need to celebrate...it is Valentines Day after all!!

No plans? Don't panic! I've got a few ideas on how to go from glum to glam for any last minute celebrations - be that a hang time with your friends or an after school pick me up with your little cupids. Because we're going to celebrate hearts day today and well, every day.

When setting up for a last minute celebration you can still elevate your table with an effortless, coordinated look which is why I like breaking out these gold foiled cocktail napkins and dessert plates from Papyrus to make the get together feel a extra glamorous without any extra stress. Speaking of party, why not put a little extra into your refreshments? How about making a rose infused pink lemonade with a spritzy kick...not to mention rose petal ice cubes, just because. This drink is my latest obsession! Fizzy, fruity and an unexpected floral punch - If that isn't a love song for spring, I just don't know what is!

So weather you have Valentine's plans or not - this drink is the perfect spring through summer pick me up that has the ability to bring a little extra joy into any occasion...even if that's just making it through Wednesday.

- SPARKLING ROSE LEMONADE -

INGREDIENTS  - Serves 4 - 6

  • 1/2 cup sugar

  • 4 cups water

  • 2 cups fresh squeezed lemon juice

  • 1/3 cup pure cranberry juice

  • 1 oz rose simple syrup (*recipe below)

  • Tonic Water

  • Rose petal ice cubes

DIRECTIONS

Add water and sugar into a saucepan on medium heat and stir until sugar dissolves, set aside to cool. In a large pitcher add sugar water, lemon juice and cranberry juice, stir well.  To assemble the drink, fill glasses with ice and fill 1/3 - 1/2 of the glass with pink lemonade. Add rose syrup and stir well before topping off with a tonic float. Feel free to adjust quantities to your desired fizz and rosy preference!

For the rose petal ice cubes, simply fill ice cube tray half way with distilled water and add a few rose petals, allow to freeze before filling the rest of the cube tray with distilled water and topping with more rose petals.

*ROSE SIMPLE SYRUP

Add water and sugar  to a sauce pan and bring to a boil, stirring until sugar dissolves. Allow simple syrup to cool before adding rose syrup to avoid a bitter flavor. Store in a clean sealable container for up to 3 weeks.
